Exciting Pasta with Tuyo (Dried Herring)

Good day, friends! Today, I feature one of my favorite pasta dishes as my first food entry in this blog. Even my family can’t get enough of this. Oh, what an easy way to make your pasta more exciting with the help of “tuyo” or dried herring, particularly, the Divine Livelihood Tuyo available at the premises of St. John Bosco Parish in Makati. Here it goes.

Ingredients: 1 bottle of Divine Livelihood Tuyo, 400 grams of spaghetti pasta cooked according to package instructions, 5 tbsps of olive oil, 3 to 5 cloves of garlic (minced), 1 to 2 white onions (finely chopped), 2 to 3 tomatoes (sliced), 2/3 cup of black olives (sliced), 1/3 cup of capers, 1/3 cup of water, slices of lemon or calamansi, and 1/4 tsp of crispy garlic in hot chili oil (per serving, optional).

Cooking instructions: Cook the spaghetti pasta following the package instructions, then set aside. Saute onions, garlic, and tomatoes in olive oil for 1 to 2 minutes. Mix in the Divine Livelihood Tuyo and cook for 1 more minute. Add in the black olives and capers and continue cooking for 30 seconds. Add in the water and continue stirring for 30 seconds. Mix in the spaghetti pasta in four batches, stirring gently after each batch. Continue stirring for about 2 minutes or until the pasta is evenly coated with the tuyo mixture/sauce. This makes 6 servings.

Serve hot with lemon or calamansi on the side (you may wish to squeeze lemon or calamansi on top of the pasta). As an added kick, you may also wish to add crispy garlic in hot chili oil (or just the chili oil, also from Divine Livelihood) per plate or serving. Warning! This pasta dish is packed with awesome flavors that excite the senses… so much that you may finish 2 or more servings… in one sitting. Enjoy!
